Our extensive Vegetable Garden provides much of the produce used in our kitchen, creating a unique seasonality in our menus, that reflects the changing landscape of the Colca Canyon.
There are five natural greenhouses in the garden, four of which house vegetables and one where flowers are grown.
A variety of young trees have been planted including peaches, apples, quince, elderberry and cherry trees (capuli). Exotic passion fruit, cape gooseberries, strawberries and raspberries are dotted throughout the Vegetable Garden. There is also a prickly pear field.
Our vegetable gardens are always open to explore, and you are more than welcome to pick your food for the evening meal straight from the ground!
